BACON, GOUDA AND PIMENTO EGG BITES PERFECT FOR YOUR EASTER TABLESCAPE

My bacon, gouda and pimento egg bites will give Starbucks a run for da’ money. I’ve been in the test kitchen for several weeks now trying to find the perfect mix of ingredients that will satisfy a low-fat but tasty bite to add to my Easter table. These bites will deliver and be something you can easily make for the week giving you a blast of protein to start your day. The secret weapon…. you’ll die…. it is cottage cheese!!

First, buy the right pan. I bought a Wilton 48 cavity mini muffin pan that will actually fit in the oven although it doesn’t look like it. It was about $12.00. These take about 12 minutes to whip up and bake in about 5-6 minutes. The fabulous and amazing news is that they are 34 wonderful calories per bite size piece.

WHAT YOU WILL NEED TO MAKE THESE CUTIES:

  • 16 extra large eggs

  • 14 Tblsps of cottage cheese ( I didn’t use low-fat)

  • 1 4 oz jar of pimentos drained

  • 2 tsp of Pepper

  • 2 tsp of Salt

  • 1 tsp of garlic powder

  • 1 16 oz package of peppered bacon cooked crisp/thick cut

  • 8 oz package of gouda cheese grated about 2 cups

  • 3 - 4 dashes of tabasco sauce ( I do 5)

    Preheat your oven to 360°F and use the middle rack

  • Spray your pan with nonstick spray first so you don’t forget!

  • Whisk eggs, cottage cheese, salt, pepper, garlic powder, hot sauce and pimentos in a large bowl and blend well. Fill muffin pans with egg mixture.

  • Add bacon into each mini tin and top with the grated gouda cheese. I use a fork to stir each mini tin and push cheese and bacon down to the bottom of tin. Bake 5-6 minutes, voila !

  • Add in’s: shredded tater tots, fine chopped broccoli or any veggies chopped fine that you would use in omelettes, ham instead of bacon, or you could change out the cheese for shredded gruyere ( yummy)

Style Tip: When styling your Easter Tablescape stay classy and simple. I don’t like plastic eggs or too many items on the table. Always add vines in between the flowers to fill in the table and look for simple earthy items such as the birds nest to sweeten it up.
