Radish Tart with Burrata Cheese

Our first of our summer series of Style Wednesday was kicked off with the theme of Veggies and Vines.  To celebrate our summer bounty of veggies overflowing, we presented 4 recipes focused on veggies.... Hope you like this one.  It is a radish tart with burrata cheese easy as pie. 

First the crust..

2 !/2 cups unbleached flour

1 1/2 teaspoons of kosher salt

1 Tablespoon of sugar

2 sticks of cold unsalted butter cut into small pieces

1/2 cup of confectionery sugar

7-8 tablespoons of ice water

Mix ingredients adding butter a little at a time until the mixture looks like small peas.  Add water a little at a time until it all holds together nicely. This will be enough for a one 9 inch tart pan with removable bottom. 

Preheat oven to 400 degrees.  Roll out dough and place in tart pan pricking bottom with a fork.  Freeze for 20 minutes.

Bake at 400 for 15 minutes use parchment to line the inside holding with dried beans or pie weights.  Take off after 15 minutes and line the crust with tinfoil and bake another 20 minutes or until brown.  Please cool down all the way.

Second for the filling:

1 Tablespoon of butter

1 medium shallot

3 cups of cauliflower cut finely

1/2 cup of heavy creme

Salt and pepper

8 ounces of burrata cheese

1 large egg

1 tsp of fresh thyme leaves

1/2 tsp of celery seed

1/2 tsp of fennel 

1 tsp of lemon salt

1 cup of radishes preferably Easter egg radishes

2 teaspoons of olive oil

Mix the cauliflower until it is fine pieces.  Add the other ingredients.  You should have about 1 1/2 cup of filling.  Transfer to crust.

Toss radishes with olive oil first and then season with salt and pepper placing the radishes anyway you would like on top of the filling.  Bake until light brown about 30 minutes.  

Cool before serving.

WHAT YOU WILL NEED:

While that's baking, melt butter in a skillet and add shallots, for 4 minutes until translucent.  Add cauliflower.
